how did you pick a setup without guessing Panel voltage and MPPT limits?

I am trying to plan a small solar plus battery setup and I keep getting stuck on the MPPT part. I watched a couple videos and thought I got it, then I looked at panel Voc and temperature and suddenly I felt like I was one wrong number away from cooking a controller. The specific moment was when I realized my “two panels in series” idea could be fine on paper but maybe not on a cold morning.

How do you personally match panel voltage, string configuration, and MPPT limits without turning it into a spreadsheet nightmare. Do you start from the controller limits first, then build strings around it, or do you start from panels you already have. I would love a simple rule of thumb that keeps it safe but not overly conservative.
 
Controller limits first, every time. Max PV voltage sets the series count, then current limits decide how many strings in parallel. It feels boring, but it prevents the “cold morning surprise” that can smoke a controller.
